Flower Power

Flowers aren’t just beautiful, some of them are even edible. Tantilizing dishes can be created making edible flowers the forefold, on a dish not just the backbone of taste. Botanika is a new brand with the mission to produce and sell natural edible flowers, herbs and salads in Luxembourg. Kate Greenwood is the woman behind the concept and the company.

It has always been her passion and motivation to work outside. She started Botanika 1st March 2018 with an empty 20a field in Hobscheid:

“After asking myself what I really want in my life, I came to the conclusion that my happy place is not being stuck in an office all day long, but to pursue my passion: growing tasty produce”.

Locally, fresh, “grown not flown”,that’s her motto. She wanted to bring something new to the Grand-Duché, nothing ordinary. In her garden, everything is seasonal (except the dried edible petals which you can buy at Luxembourg House).

She uses the no-dig-method: “I always have the wise words of Beth Chatto, a British plantswoman in my head, who said that the right plant has to be in the right place, you have to go with nature and know your soil and not fight against it”.

 

Not all flowers or herbs are edible: “You have to know what you put in your mouth, some of them are extremely toxic, so if you don’t know please do not eat them ! and take advice from an expert”. Most known edible plants are borage, nasturtium flowers & leaves, courgette flowers and chive flowers. If you are now inspired by Kate, you can get many of her recipe ideas on her website www.botanika.lu. Although the first year has been tough, Kate is looking forward to this year and says Botanika is expanding into flowerfetti, for the very special occasions like weddings, she will create edible bouquets.
